During rice milling, the fat as well as the micronutrient-rich bran layers are removed to produce the commonly consumed starch-rich white rice, removing 75 to 90% of the B-group vitamins. Fortification of rice makes it more nutritious by adding vitamins and minerals in the post - harvest phase.
